Bacon & Celeriac Soup

This recipe I cut from a magazine and it says on the cuttingĀ that the recipe has been double tested by the Good Housekeeping Institute, I have no idea now which magazine this was taken from.

Bacon & Celeriac Soup
Tasty unusual flavours, I use celeriac a lot - celeriac mash and chips or roasted with lots of other root veg as well as for soup.

  1. Put aside four rashers of the bacon.
  2. Fry the onion with the garlic until onion softens.
  3. Add chopped bacon and cook for 5 mins.
  4. Stir in the celeriac and cook for a further 5 mins.
  5. Add the stock and seasoning, bring to the boil.
  6. Reduce the heat and simmer gently for 15 mins or until the celeriac is very tender.
  7. Cool slightly, liquidise until smooth.
  8. Grill the reserved rashers of bacon.
  9. Reheat the soup, adjust seasoning and serve garnished with the grilled bacon and thyme.
