Bramble Mousse
A light fruity mousse, full of flavour, beautiful colour and very seasonal, quick and easy to prepare without creating too much washing up (I hate washing up!). A change from the usual chocolate mousse. This recipe comes from a Sainsbury's - Best of Desserts book, published in 1985, the author: Carole Handslip. I have whipped this up on many occasions with good results and frozen fruit can be used if you have some stored in the freezer

Bramble mousse
Instructions
  1. Set aside a few blackberries for decoration
  2. Place the rest in a pan with the tbsp of water and gently simmer
  3. Cool slightly
  4. Place eggs and sugar in a bowl and whisk until thick and mousse like
  5. Either blend or mash blackberries and then sieve to remove pips
  6. Heat gelatine until dissolved
  7. Add blackberry puree and gelatine into egg mixture
  8. Fold in whipped cream
  9. Pour into a 1.2 lt (2 pint) dish or individual pots/glasses and chill to set
  10. Decorate with more whipped cream and the saved blackberries
