Butternut Squash Soup
A hearty potage soup which I often make for my granddaughter as its full of flavour and she will only eat squash this way. She is a very picky eater but will eat soup with lots of bread to dunk in it.

  1. Fry all vegetables in a large pan that has a lid in the olive oil until the onions soften.
  2. Add the stock, garlic (and chilli flakes if using) to the vegetables giving it a good stir. Place on the lid and leave to simmer for 30 minutes.
  3. Season with salt and pepper.
  4. Liquidise or mash well and return to the heat to bring to pipping hot and adjust the seasoning. The soup will be quite thick and a beautiful colour.
  5. Add a tsp cream and some chopped herbs to each bowl of soup to make extra special.
