Cake Toppings
Once a cake has been baked how is it to be decorated? Some cakes just need a dusting of icing sugar, some look just great straight out of the oven. Some fruit cakes look better with a glaze of warmed jam. With such a sweet tooth as mine cakes are generally finished off with some sort or icing. Below I have written out some of my favourites to give you some inspiration!

Instructions
Chocolate Topping - 1
  1. Gently heat the butter and caster sugar together until melted, stir in the condensed milk and bring to the boil. Cool for 5 mins then stir in the chocolate drops until melted. Spread over the cold cake and scatter with chocolate drops once the topping has cooled.
Chocolate Topping - 2
  1. Gently heat the caramel condensed milk to warm through enough so the chocolate drops will melt into it. Use to spread onto the cake but let cool before decorating with chocolate drops or flaked chocolate as this will melt into the topping if too warm.
Chocolate Topping - 3 - Fudge
  1. Heat the evaporated milk and sugar in a pan. Stir and bring to the boil, let simmer for 5 mins. Take the pan off the heat and add the broken chocolate stirring until it has melted then add the butter and do the same. Cool the icing until it reaches a spreading consistency.
Chocolate Topping - 4 - Brownies
  1. Melt the butter and add the cocoa. Cook over a low heat for 1 minute. Remove from heat and add evaporated milk and icing sugar. Mix thoroughly. Spread over cake in tin and leave to set.
  2. Cocoa has a stronger chocolate flavour than chocolate powder but needs to be cooked and sweetened.
Cream Cheese Topping
  1. Whip the cream until softly stiff. Cream the icing sugar and cheese together adding the vanilla extract then fold in the cream until blended. Spread onto a cold cake making a swirling pattern and decorate with chopped nuts.
Cream Cheese Frosting - Light
  1. Whisk all the ingredients together in a bowl to combine them and spread on your cake once it is cold.
Butter Icing
  1. Place butter into mixing bowl and mix until soft, add the icing sugar blending carefully to reduce loss of powder in a cloud, add milk and mix until light and fluffy. Add colouring and any flavouring at this stage if desired.
