  1. Set out the olives, pepperdews and anchovies into small dishes
  2. Warm the blinis in the oven
  3. On half the blinis spread with cream cheese and add a slice of smoked salmon and garnish with dill.
  4. On the rest of the blinis spread sparingly with chilli jam top with a prawn and garnish with dill.
  5. Lightly butter half the crackers and add a thin slice of cheddar, top with onion relish and garnish with parsley,
  6. Spread the rest of the crackers with herb cream cheese and top with onion relish and garnish with parsley.
  7. To make the sausage rolls. Cut the pastry into four squares. Roll out each square into a rectangle 10"x 6". Mark each rectangle in half along the length with a round bladed knife.
  8. Cut open 2 tubes of sausagemeat with a pair of sissors. With a knife cut the sausagement in half lengthways and then each half in half lengthways again so you have four lengths of sausagemeat from each tube.
  9. Place a piece of the length of sausagemeat down each centre of the pastry on both sections as marked out. Cut the lengths of meat to size.
  10. Using a pastry brush wet each side of the meat then cut down the scoured middle of the pastry. Either roll the pastry round the meat or bring up the two sides and squeeze together to seal. Slash along the top of the pastry and cut the roll into even pieces about 11/2 inches long
  11. Place the sausage rolls onto a baking sheet and brush with egg wash. The oven should be hot at 200 C 400 F Gas 6. Cook for 10 - 15 minutes or until the pastry has browned but not too dark.
  12. Serve the sausage rolls hot if you can
  13. To make the curried ones, mix 2 tbs of curry paste into a tube of sausagemeat and continue as described. When cooked these will have turned yellowish in colour. Garnish with coriander to show that the food is spicey.
  14. To make the sausagemeat balls: mix with a pound of meat the breadcrumbs, apricots, fried onion, oil and herbs or thyme, seasoning with salt and pepper. Divide mixture into small pieces and shape into balls, place on a baking sheet and cook at a medium heat for 15 - 20 minutes until just turning brown, serve while hot.
Recipe Notes

To make your own sausage rolls is very simple if you buy the pastry, and well worth the effort. If you buy a good sausagemeat from a local butcher you'll find you will have to make double the quantity expected as they will disappear like hot cakes!
