Carrot Cake
Carrot cake which includes a mashed banana and coconut. Recipe from Country Garden Kitchen - passed down through the generations. I also think this is unusual for a carrot cake as it is cooked as a sandwich cake.

Instructions
  1. Heat oven to 180°C/375°F/Gas 5. Line 2 x 8" sandwich tins.
  2. Whisk together the eggs, oil and sugar. Mash the banana.
  3. Add the dried ingredients and the fruit
  4. Pour into the sandwich tins
  5. Bake until firm
  6. Cake decorated with a cream cheese topping and orange peel
