Unusual way of roasting potatoes. Everybody enjoys them! A fantastic accompaniment to any meal especially to a dish that also has a citrus element.

  1. Preheat the oven to 190 C/375 F/Gas 5. Select a roasting tin to hold the potatoes in one layer in the tin.
  2. Peel the potatoes and cut in half. Place each half flat side down and cut down as if making thin slices - don't cut all the way through.
  3. Put olive oil in the roasting tin placing potatoes in the tin and using a pastry brush, coat the potatoes with melted butter and put into the oven to brown.
  4. While the potatoes are cooking, place the orange juice, rind and sugar in a small pan and heat gently, stirring until the sugar has dissolved. Simmer for 3-4 minutes, until the glaze is fairly thick and then remove from the heat.
  5. When the potatoes begin to brown, brush all over with the orange glaze and return to the oven to roast until deep golden brown and cooked through.
Recipe Notes

Always a good accompaniment with any dish especially one that also uses citrus e.g. fish, such as Sea Bass with citrus fruits or duck a la orange etc.
