Matchstick Potato Bake
This is the recipe for you if you like cream and cheese with your potatoes. Wonderful creamy potatoes well flavoured with herbs and sprinkled with cheese. If you are watching the calories or fats then use half fat creme fraiche in place of the double cream. Good dish for a dinner party.

  1. Preheat the oven to 190°C/375°F/Gas 5. Grease a baking dish.
  2. Peel the potatoes and cut into matchsticks.
  3. Melt the butter in a frying pan and add the onion and garlic to fry until softened.
  4. In a large bowl whisk together the eggs and cream. Mix in half the cheese.
  5. Add the onion mixture, the potatoes, herbs, seasoning and nutmeg.
  6. Spoon into the prepared baking dish and cover with the rest of the cheese.
  7. Bake in the oven for 50-60 minutes until golden brown. Serve hot from the dish.
