Pepper (Capsicum) Soup
I love this soup and it is such a beautiful colour. I don't know how or who I got the idea for this soup from - I don't have a recipe, but it is well worth having a go, it is delicious!

  1. Fry the onions and celery until soft.
  2. Add the chopped peppers and continue to fry without letting the veg get browned.
  3. Add the garlic, herbs and stock, (the stock should cover the amount of vegetables in the pan plus a bit more) simmer until the flavour has been imparted to the liquid. If you want to flavour with any alcohol add it to the pan at this stage.
  4. Liquidise the soup, it will turn a beautiful red colour. Reheat and adjust the seasoning before adding any cream to give it a really rich flavour. Garnish with chopped herbs.
Recipe Notes

To give any flavour soup a kick a few dried chilli flakes can be sprinkled in at the time of adding the stock.
