Pheasant Casserole with Herb Dumplings
A very tasty recipe for pheasant which is quick to put together and simmers away in the oven for 2 hrs. Not as heavy as some other recipes.

  1. Heat oven to 170°/325°F or Gas mark 3
  2. Fry the bacon with the onions, celery and carrot and put in a casserole dish
  3. Coat rabbit joints in seasoned flour and add to the casserole
  4. Lightly brown the rabbit joints.
  5. Add herbs, wine and stock to the casserole dish.
  6. Cover and cook for 1 1/2 - 2hrs
  7. To make the dumplings:- Mix the flour, salt, mustard, suet and herbs together.
  8. Add enough cold water to make a dough and form into 12 balls.
  9. Place into the casserole and cook for 30 minutes.
  10. Cover and cook until the dumplins are well risen and fluffy.
