Windfall Cake
Quick, simple but very tasty cake which can be used for either afternoon tea or for dessert with custard or cream. Uses apples, sultanas/raisins and cinnamon for flavour. I like to keep the apple in quite large chunks and ice the top of the cake with glacé icing. I alway bake this in a 23cm/9" square tin and you will need a large mixing bowl to combine the ingredients. It doesn't look as though there is enough cake mixture for the amount of apple but once it is cooked you will realise this is its charm!

Instructions
  1. Preheat oven 180°C/350°F/Gas 4. Line baking tin. Peel, core and chop apples.
  2. Mix spice and salt into flour
  3. Rub in butter
  4. Stir in sugar, apples and sultanas

  5. Add eggs gently, DO NOT BEAT
  6. Spoon into tin, scraping all the mixture out of the bowl and spreading it into the corners

  7. Bake for 50 minutes or until cooked
  8. Allow to cool in the tin before turning out

  9. Decorate with glacé icing
